1. Relaying outgoing SMTP mail to another mail server is completely do-able in Domino.
2. Accessing the domino server from the web would entail having some port routing in your firewall point all port 80 requests to the domino server. If you cannot redirect the port, then people are not going to be able to use iNotes.
I have seen quite a few companies with two mail servers, one inside and one outside the firewall. This is actually a pretty good configuration if you're using two domino servers and replication between them. That way users have full access to their mail via the web, and your internal domino server is safe and secure. Using a sendmail server as your public server is not going to automatically allow iNotes to work.
